Japanese Oroshigane graters produce a finer grating result and are therefore significantly different from Western graters. They are perfect for finely grating radish, ginger, garlic, wasabi, or carrots.
Grate the vegetables with a circular motion to obtain a very fine paste. The sharpness of the grating teeth "cuts" the fibers of the ingredients into small pieces instead of crushing them, so they retain sufficient moisture after grating, thus preserving their flavor and nutrients.
Tip: Cover the grater with parchment paper or aluminum foil before grating – this makes it easier to clean.
