The Japanese Oroshigane graters are perfect for grating ginger, wasabi and garlic. Rub the vegetables in a circular motion to make a very fine paste. Due to the sharpness of the grating teeth, the fibers of the ingredients are "cut" into small pieces instead of being crushed, so that after grating they still contain sufficient moisture and thus taste and nutrients. Each of the copper graters is handcrafted in Takaoka. The copper is tin plated and cut into its traditional shape, the teeth are then hand sawed and lifted.
Copper has been used for graters since the Edo period; stainless steel or iron would not be suitable for lifting the fine teeth. The copper is compacted and hardened by hammering, so the sharpness of the rubbing is unsurpassed and it also has an antibacterial effect.
